1 cup Healtheries Simple Gluten Free Baking Mix
1/2 tsp gluten free baking powder
1/2 cup coconut cream
3 Tbsp sugar
1 egg
Mix all of the ingredients together and cook in 1/4 cup measurements in a hot pan.
Serve with maple syrup and dairy free margarine.

How was the texture? I've considered going gluten free but have been put off by the textures.
