Carrot Muffins GF DF

Makes 48 mini muffins.

1 1/2 cups Healtheries Simple Baking Mix
1 tsp mixed spice
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp baking soda
1/2 cup caster sugar
1/2 cup brown sugar (I use muscovado sugar instead)
3 large eggs
1 cup canola oil
1 tsp vanilla essence
2 cups grated carrot
1 cup dried mixed fruit
4 Tbsp dessicated coconut

Preheat oven to 180 degrees Celcius. Prepare silicon muffin trays by using paper patty cases. Put all the ingredients into a mixing bowl in order above. Combine with a wooden spoon - don't over-mix! Cook for 15 minutes or until golden brown.
